Gamay is also called the hasty Beaujolais grape. Hasty because of the rapid vinification using carbonic maceration, especially used to get the nouveau wine in time on the market (third Thursday of November). But also its ripening, so it can ripen somewhere as cool as the Loire. The wines can be described as fresh and fruity, light coloured, often with a strong blue tinge. In the taste and smell one will find strawberry’s, raspberry’s, cherries and sometimes banana. The wines can be very refreshing, when served chilled, thanks to low tannins and high acidity.
