Late ripening Italian variety for red wines. This variety is the most important ingredient in Valpolicella and Bardolino. The wines are soft and light and have seldom much colour or tannin. The wines are however fruity and perfumed with cherrry and floral aromas. Controlling yields is important. Corvina with its thick skins is succesfully used for drying to make recioto and amarone wines because the thick skins protect the grapes from rot while they shrivel.
