Pedro-Ximenez is a grape variety for white wine. The variety is grown predominantly in the Andalusian regions Montilla, Málaga and Jerez. But is also found in Valencia and Extremadura. Normally it produces wines sweet fortified wines when the grapes are sun-dried and light crispy wines when vinified early enough. Pedro-Ximenez is famous for its sweet wines of high quality, that have a fruity flavour and a distinctive aroma of figs and nuts, achieved both by drying the grapes in the sun and the long time spent in barrels.
